PREPARATION

  • Wash And Prepare Celery: Rinse the celery sticks under cold water to remove dirt or debris. Trim both ends and remove any fibrous strings by running a vegetable peeler lightly along the back of the stalk.
  • Dry The Celery: Pat the celery sticks completely dry with a paper towel. This step is essential to prevent the peanut butter from sliding off.
  • Fill With Peanut Butter: Using a spoon or butter knife, spread peanut butter evenly along the groove of each celery stick. For a neater appearance, smooth it out with the back of the spoon.
  • Add Raisins: Arrange raisins in a neat row on top of the peanut butter, pressing them in slightly so they adhere. Space them evenly for a consistent flavour in every bite.
  • Arrange And Serve: Place the prepared celery sticks on a serving plate and enjoy immediately. For a more polished look, cut each celery stick into bite-sized pieces before serving.

TIPS

  • Celery Selection: Choose firm, fresh celery with no wilting. If the celery is slightly limp, soak it in ice water for 5–10 minutes to restore crispness before using.
  • Peanut Butter Consistency: If using natural peanut butter, stir it thoroughly to blend the oils before spreading. Refrigerating peanut butter for 10 minutes before use can help achieve a thicker consistency.
  • Raisin Placement: Press the raisins gently into the peanut butter to secure them and prevent them from rolling off when eating.
  • Serving Suggestion: Arrange on a serving board with additional fruits like apple slices, banana rounds, or strawberries for a colourful and nutritious platter.
  • Make It Travel-Friendly: If preparing in advance for lunchboxes or snacks on the go, store the peanut butter separately and assemble just before eating to keep the celery fresh and crunchy.

VARIATIONS

  • Nut-Free Alternative: Replace peanut butter with sunflower seed butter, tahini, or soy nut butter for a school-safe version. These options still provide a creamy texture and nutty taste without allergens.
  • Extra Crunch: Sprinkle chopped nuts, granola, or toasted coconut flakes over the peanut butter before adding raisins to enhance texture and flavour.
  • Fruity Twist: Instead of raisins, try using dried cranberries, chopped dates, or sliced fresh grapes. Each variation offers a unique level of sweetness and chewiness.
  • Chocolate Addition: For a dessert-like version, sprinkle mini chocolate chips over the peanut butter or drizzle with a small amount of melted dark chocolate.
  • Savoury Option: Swap peanut butter for cream cheese or Greek yoghurt spread, then top with diced bell peppers, cucumbers, or everything bagel seasoning for a savoury twist.
  • Spiced Up: Add a pinch of cinnamon, nutmeg, or even a light dusting of cocoa powder to the peanut butter before spreading it onto the celery.

PREPPING AND STORAGE

  • Refrigeration: Store fully assembled celery bites in an airtight container in the fridge for up to 24 hours. To prevent the celery from drying out, cover them with a damp paper towel before sealing the container.
  • Meal Prep Tip: For best results, store celery sticks, peanut butter, and raisins separately and assemble them just before eating. This ensures optimal crunch and prevents sogginess.
  • Freezing: Not recommended, as celery loses its crunch and peanut butter can harden when frozen.
