PREPARATION OF LEMON BALM AND MINT HERBAL TEA
- Prepare the herbs: Clean the lemon balm and mint leaves by washing and rinsing them under cool running water.
- Steep the herbs: Start by putting the leaves of lemon balm and mint into a heat-proof mug or teapot. Now, pour boiling water over the leaves.
- Infuse the tea: Tuck a lid on your mug or teapot and let the infusion steep for 5 to 7 minutes. That will infuse herbs into your water along with their essential oils and flavours.
- Strain and sweeten: Strain the drink to get the lemon balm and mint leaves out of your beverage. You may add 1 teaspoon of honey if you would like your drink a little sweeter.
- Serve: Pour this tea hot for a warming infusion, but cool it to room temperature and chill it over ice for refreshing herbal iced tea.

TIPS
- For stronger flavour, it can be steeped for 10 minutes, or you can use more leaves.
- Chill it and serve. If you want, chill the tea, then refrigerate until very cold or up to 2 hours before serving over ice cubes.
- Fresh herbs are preferred, though dried herbs can be substituted. Use 1 teaspoon of dried lemon balm or dried mint in place of the fresh.
VARIATIONS
- You can add a slice of fresh lemon or orange for the enhanced refreshing citrus flavour.
- Add dried lavender for the floral touch to soothe the mind.
- With the infusion process, one could add slices of fresh ginger to produce a hot and spicy flavour.
- Allow it to cool, then serve over ice with slices of cucumber for an incredibly cooling drink that is perfect for summer.
PREPPING AND STORAGE
- Fridge: Store leftover tea in a container in the fridge for up to 2 days; reheat or drink chilled.
- Freezing: The herbal tea can be frozen in ice cube trays. The herbal tea cubes can then be used in cold water or other beverages to improve the chilling properties.
