LAVENDER AND HONEY YOGHURT
This Lavender & Honey Yogurt recipe is a delightful blend of creamy Greek yoghurt, floral notes from dried lavender buds, and a hint of natural sweetness from honey. While this ingredient lends only a hint of delicate fragrance to lavender, an ordinary yoghurt can really be easily transformed into a fragrant, soothing dish perfect for breakfast, light snacks, or even a healthy dessert, all the while requiring only a short few minutes to prepare. Greek yoghurt, rich and poised, goes well with the faint fragrance of flowers to offer a delightful treat at any time. One should break time with this fragrant and healthy yoghurt in the evening.

TIPS
- For a more potent lavender flavour, let the yoghurt sit after adding the lavender buds for an extra 5-10 minutes.
- Too much lavender should not overpower the dish with its flavour. It should be used sparingly and only to taste at first; it does take some getting used to.
- Use local honey to flavour and boost your immune system.
- If you like it smoother, you could then strain the buds from the lavender after the yoghurt infusion.
VARIATIONS
- You can use maple syrup instead of honey for another form of sweetness.
- Add crushed pistachios or almonds for the crunch and some texture.
- You can fill them fresh with blueberries or strawberries for that little bit of added freshness and flavour.
- For the vegan version, Greek yoghurt is exchanged with plant-based yoghurt and agave nectar is replaced with honey.
PREPPING AND STORAGE
- Fridge: Leftover Lavender & Honey Yogurt can be stored in the fridge for up to 2 days in a sealed container. Stir well before resampling to redistribute the flavours.
- Freezing: It freezes pretty thick, so the texture of the yoghurt will come out different, and it’s also too strong in lavender flavour.
