PREPARATION

  • Roast The Aubergine: Roast the aubergine in the oven or over an open flame until the skin is charred and the flesh is soft.

  • Mash The Aubergine: In a bowl, mash the roasted aubergine with a fork until smooth, or use a food processor for a creamier consistency.
  • Mix With Other Ingredients: Add tahini, minced garlic, lemon juice, olive oil, salt, and pepper to the mashed aubergine. Stir until well combined.
  • Adjust Seasoning And Serve: Taste and adjust seasoning if necessary. Drizzle with extra olive oil and serve with pita bread or vegetables.
