PREPARATION OF SPICY PEANUT NOODLES
- Cook the noodles: Prepare rice noodles according to the package’s instructions. Drain it and set aside.
- Prepare the peanut sauce: Combine the peanut butter, soy sauce, sesame oil, lime juice, and a small amount of hot water in a small bowl and whisk until you have a smooth paste. Add more water to thin, if necessary.
- Sauté the garlic: Add sesame oil over the pan, and fry the garlic on medium flame. Then, add the minced garlic and cook for another 30 seconds to make it aromatic but not burn.
- Combine the noodles and sauce: Toss the noodles with the sauce by adding the cooked noodles into the skillet with the garlic and then pouring over the peanut sauce. Lastly, small red chilli flakes are sprinkled before tossing well.
- Serve:Transfer noodles to a plate garnished with chopped green onions. It is served as a main dish or with stir-fried vegetables on the side.

TIPS
- If you want it thicker, take less water while mixing it with peanut sauce.
