SPICY PEANUT NOODLES

Spicy Peanut Noodles is one of the quickest and tastiest dishes. It is best served when one needs an excellent meal in a short time. This dish comprises rice noodles covered with rich, creamy peanut sauce laced with garlic, soy sauce, and lime juice, so it has a perfect balance of savoury, spicy, and tangy flavours. The red chilli flakes added just the right amount of heat, and the green onions gave the fresh crunch. It’s a delicious lunch dish or even for dinner, and easy to mix with more proteins or veggies according to personal tastes.

INGREDIENTS

  • 75g rice noodles
  • 1 tbsp peanut butter
  • 1/2 tsp soy sauce
  • 1/2 tsp sesame oil
  • 1/4 tsp red chilli flakes
  • One clove of garlic, minced
  • 1 tbsp green onions, chopped
  • 1 tsp lime juice

PREPARATION OF SPICY PEANUT NOODLES

  • Cook the noodles: Prepare rice noodles according to the package’s instructions. Drain it and set aside.
  • Prepare the peanut sauce: Combine the peanut butter, soy sauce, sesame oil, lime juice, and a small amount of hot water in a small bowl and whisk until you have a smooth paste. Add more water to thin, if necessary.
  • Sauté the garlic: Add sesame oil over the pan, and fry the garlic on medium flame. Then, add the minced garlic and cook for another 30 seconds to make it aromatic but not burn.
  • Combine the noodles and sauce: Toss the noodles with the sauce by adding the cooked noodles into the skillet with the garlic and then pouring over the peanut sauce. Lastly, small red chilli flakes are sprinkled before tossing well.
  • Serve:Transfer noodles to a plate garnished with chopped green onions. It is served as a main dish or with stir-fried vegetables on the side.

TIPS

  • If you want it thicker, take less water while mixing it with peanut sauce.
  • Use smooth peanut butter so that the inside is quite creamy.

  • Add some protein, like tofu, chicken, or shrimp, and make it more significant.
  • Add some textures of stir-fried vegetables such as bell peppers, broccoli, or snap peas.
  • Almond or cashew butter may be substituted for peanut butter if desired.

PREPPING AND STORAGE

  • Fridge: Leftover Spicy Peanut Noodles go into the refrigerator in an airtight container. Use within 2 days. Carefully reheat on the stovetop or microwave, adding a small amount of water to loosen the sauce.
  • Freezing: It should not be thawed, as the texture of the noodles may change when thawed.
