PREPARATION
- Prepare the Vegetables: Dice the red bell pepper, onion and mince the garlic for quick cooking.
- Cook the Chicken: In a medium skillet, heat olive oil over medium heat. Add the ground chicken, breaking it apart as it cooks.
- Add the Vegetables: Once the chicken is lightly browned (about 4-5 minutes), add the bell pepper, onion and garlic. Sauté for another 3-4 minutes until the vegetables are softened.
- Season: Pour in the low-sodium soy sauce and season with salt and pepper to taste. Stir well, cooking for an additional 1-2 minutes until flavours are blended.
- Assemble the Wraps: Spoon the chicken mixture into the centre of each lettuce leaf. Fold the edges of the leaves around the filling, if desired and enjoy it as a wrap or open-faced.

TIPS
- Serve the wraps fresh to prevent the lettuce from wilting.
- Customise the flavour by adding sriracha or chilli flakes for a spicy twist or topping with fresh herbs like cilantro for extra flavour.
- For a saucier filling, add a touch more soy sauce or drizzle a light teriyaki glaze.
VARIATIONS
- Add chopped peanuts or sesame seeds for added crunch and flavour.
- For a vegetarian version, substitute ground chicken with crumbled tofu or tempeh.
- Include shredded carrots or cucumber strips for additional texture and nutrients.
PREPPING AND STORAGE
- Fridge: Store leftover chicken filling in an airtight container in the fridge for up to 2 days. Reheat gently in a skillet or microwave before serving.
- Freezing: Freeze the cooked chicken filling in a sealed container for up to 2 months. Thaw overnight in the fridge and reheat before using in fresh lettuce wraps.
