  • 1 tsp soy sauce (low sodium)
  • 1 tsp olive oil
  • Salt & pepper, to taste

PREPARATION

  • Prepare the Vegetables: Dice the red bell pepper, onion and mince the garlic for quick cooking.
  • Cook the Chicken: In a medium skillet, heat olive oil over medium heat. Add the ground chicken, breaking it apart as it cooks.
  • Add the Vegetables: Once the chicken is lightly browned (about 4-5 minutes), add the bell pepper, onion and garlic. Sauté for another 3-4 minutes until the vegetables are softened.
  • Season: Pour in the low-sodium soy sauce and season with salt and pepper to taste. Stir well, cooking for an additional 1-2 minutes until flavours are blended.
  • Assemble the Wraps: Spoon the chicken mixture into the centre of each lettuce leaf. Fold the edges of the leaves around the filling, if desired and enjoy it as a wrap or open-faced.
