CHIVE AND FETA OMELETTE
This Chive & Feta Omelette is a delicious, quick, and satisfying meal. Fresh chives with tangy feta cheese raise this omelette to a new level of savoury contrast; the creamy melt of feta into eggs yields the oniony freshness of chives. It is pretty flexible and can be prepared in just a few minutes, hence one of those perfect options for a busy morning or simple brunch. The ease of this omelette shows the ingredients themselves, and it easily adjusts to your favourite herbs or extra vegetables.

PREPARATION OF CHIVE AND FETA OMELETTE
- Whisk the eggs: Beat the eggs with a bit of salt and a few twists of pepper in a small bowl until they become just frothy and well-mixed.
- Heat the pan: For this recipe, start by heating the pan. Pour 1 tsp olive oil into a non-stick frying pan and heat over medium heat. Then, put the egg mixture in it when it’s hot.
- Cook the omelette: As soon as the eggs start to set, you tuck the sides in with the spatula, allowing the liquid egg to flow down toward the sides.
- Add the filling: Add the filling by sprinkling crumbled feta cheese and chopped chives only on half of the omelette.
- Fold and serve: Fold it over, then serve hot for another minute until it has set to a fluffy omelette. Take off the heat and serve immediately.

TIPS
- For a fluffier omelette, whisk the eggs really well to incorporate air.
- Do not overcook the omelette. Pull it off the heat while it’s still slightly soft and creamy in the middle.
- Instead of olive oil, you can use non-stick cooking spray to reduce calories.
- Sometimes, some milk or cream can also be whisked into the eggs for added richness.
- Another fresh herb which can be used as chives is new parsley or dill.
VARIATIONS
- You can add sautéed mushrooms or spinach for added nutrition and flavour.
- For a cheesy flavour variation, substitute with goat cheese, shredded cheddar or mozzarella.
- Add cherry tomatoes, pieces of bell peppers, and olives to give a Mediterranean twist.
- This meal would be more fulfilling if an omelette were served with whole-grain toast on the side or with some avocado.
PREPPING AND STORAGE
- Fridge: You may store any leftover omelette in the refrigerator for up to 2 days. Then warm up in the microwave for a low heat of 30-45 seconds or in a skillet over low heat.
- Freezing: Not very suitable for freezing. They actually shrink up and lose their fluffiness. They are best eaten right after they are made.
